Banana Oat Pancakes With Sweet Cheesy Berry Topping
For Pancakes
- 1 ripe banana
- 1/2 cup dry oats
- 4 eggs, scrambled
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- Coconut oil spray
For Sweet Cheesy Berry Topping
- 3/4 cup part skim ricotta cheese
- 1 teaspoon maple syrup
- 1/2 cup diced strawberries
Method :
In a mixing bowl, mash banana until there are no chunks. Scramble in 4 eggs, cinnamon and vanilla extract. Mix in dry oats and let rest for 5 minutes so that oats get wet and absorb some liquid.
Meanwhile, in a separate bowl, combine ricotta cheese and maple syrup until well blended and set aside.
Heat a non-stick skillet or griddle over medium high heat and spray lightly with coconut oil. Pour small amounts of pancake batter (about 1/4 cup) onto hot pan to form pancakes. Flip when bottoms start to brown and tops start to bubble.
