For the tart

65 gm cold butter cut in cubes
125 grams flour
45 grams powder or icing sugar
1 egg

Mix all ingredients (without over kneading) wrap in plastic wrap and refrigerate
roll out the dough and put in tray then poke its surface with a fork, cover with parchment paper and put uncooked rice or beans, bake in preheated oven 180 till borders start to get golden, remove the weight(rice or beans) and paper and let it cook till its golden brown.

For the lemon filling

4 big lemons
5 eggs
200 gm sugar
165 ml water
100 grams of butter

Mix all ingredients and put on low heat stirring constantly till it starts to thicken. remove from heat and pass it through a sieve then let it cool while covering its surface with plastic wrap (directly touching it)

For the meringue (I used half this amount)

4 egg whites
240 gm sugar

Put on water bath and stir till all sugar dissolves, use the stand mixer to beat it till hard peaks form. Mount the pie, put the lemon sauce over the crust and decorate with meringue and use a blow torch to give a finishing touch!
