Ingredients:

  • Prawns, chopped
  • 1/2 tsp Garlic, chopped
  • Salt, to taste
  • Freshly ground black Pepper, to taste
  • 1/2 tsp Parmesan cheese
  • 2 tsp Lemon juice
  • 2 tsp Pomodoro Tomato sauce
  • Black olives, chopped, to taste
  • Parsley, chopped
  • Spring onion, greens only, chopped 
  • 3 tbsp Tomato, cubed
  • Garlic butter sauce (butter melted at room temperature, add chopped garlic & chopped parsley, a touch of salt & pepper)
  • Chilli cheese, grated
  • Extra virgin olive oil
  • Long French bread
  • Fresh basil leaves

Method:

Add a little olive oil into a frying pan. Add the chopped prawns and garlic. Sprinkle some salt, and sauté. Sprinkle some black pepper, pomodoro tomato sauce, stir for a bit, add the olives, lemon juice, stir, add the cubed tomatoes, sauté a little and remove from heat. Slice the French bread slant wise, and spread with garlic butter sauce.

Add the parmesan cheese to the tapenade, spring onion greens, and mix well. Spread the tapenade on top of the garlic bread, and top with the chili cheese. Bake lightly until cheese has melted, decorate with some basil leaves. Sprinkle some chopped parsley and parmesan cheese and serve.
