Healthy Lunch With Vegetables |
Ingredients:
- 2-3 potatoes, cubed
- Green beans
- Carrots
- 1 tsp red chilli powder
- 1/2 tsp garam masala
- 3 tbsp dark soya sauce
- 1 tsp chopped green chillies
- Salt, to taste
- 2 cloves garlic, finely chopped
- 1 tomato, chopped
- 1 tbsp oil
- Spring onions, chopped
- Fresh coriander, chopped
- 1/2 lemon, juiced
Method:
In a pan, add the vegetables, red chilli powder, garam masala, soya sauce, green chillies, salt, garlic, tomato, oil. Cook for 20 minutes, adding water to required consistency. Simmer on very low heat for another 10 minutes, add the spring onions and toss everything together and simmer for another 10 minutes. Mix the vegetables again, dish out, garnish with chopped coriander, add lemon juice.
